Is this a serious question?
We bother with it because it attempts to provide the best factual understanding of the given situation. Medical research is one very obvious example.

It is a constant search for better models, demonstratable, proveable, useable.

Its not faith or belief. It operates based upon fact. Those facts are not (necessarily) the ultimate truths, but stepping stones upon the path of constant development of understanding.
