Karajan recorded four complete Beethoven symphony cycles over his career, as well as further recordings of individual symphonies (there's a wonderful 8th with the VPO from 1946, for example). I'd guess that your parents' set was the 1962/63 cycle on DG, if only because that's the best known one. If so, the even no'd symphonies therein are excellent, except the Pastoral which to my ears is played far too fast: his1953 Philharmonia version is much finer. The Fourth however is sublime, my all-time favourite recording of the 100+ interpretations I've heard of that underrated work.

Bruno Walter's Columbia SO cycle from the start of the 60s is also very strong on nos.2,4,6 and 8, and includes a wonderful Eroica as well. Of more modern versions, I think Riccardo Muti's Philadelphia set is unfairly neglected, and it's available very cheaply.
