I'm sure Damo wouldn't mind me sharing this here with you. So pleased to hear he seems to be well on the mend. Such a lovely man. Hi there, readers! Hope you’re in good shape. You can’t imagine, I still am in hospital. So, there’s not much thing to tell you. But, no worries, seems to be I may be back home in near future. Life in hospital is very monotonic, at morning all medical treatment is done, So, I’ve mainly free from noon to sleep time (mainly I sleep after midnight, or later. As I’ve no physical pressure whole day, so I’m not really tired to sleep.) During all these free time, I arranged some shows from May onward. So, this is good thing, I’ll do things I missed last three years, back on the road again. Anyway, this is newsletter, so I have to inform you something. Let me see.... Well, I talk about social network stuff many of you may involved. As I receive mails from friends to invite them for my account or something. I want to inform you if you find my name Damo Suzuki in Facebook, Twitter, etc.. it’s not this Damo Suzuki you know, it’s somebody else behind my mask. (This is wrong side of whole Internet things, get anonym fancy name, girl may be boy, and boy may girl, using other people’s name. I can’t claim them, fancy Damo registered as first, original Damo have to stay still. This is strange rule in this system. Damo’s Kitchen (1) - Tasty Rice making Many of you know that I’m cooking with passion. Mainly my own recipe. Even in hospital, I’m thinking some recipe. To involved in creative thing is always good, especially you have to stay at the place like here. It’s mind travelling, also it’s good for against aging. You can think system, build up imagination and how it should be taste like. Surely, I’m much happy to back home and use own kitchen and tools, buy some fresh and organic thing... As mainly in Asian countries habit, I eat three times warm food. My daily plan is based on cooking. You know stomach is most conservative part of your body. There’s information based from your childhood for instance. Actually, I can eat everything and I like to. But, “RICE” is my most important staple food. Someone may claim that rice has huge amount of carbohydrate and it’s not healthy. It’s true... but, I cannot help it. I like pasta, occasionally I eat bread, but rice is thing I cannot forget in my kitchen. How to make tasty rice is one kind of science. So, Damo’s Kitchen begin with tasty Rice making: We use rice here called Japonica, you can imagine of Sushi rice. I have here Japonica made in Spain. It’s hardly to get organic rice. While ago I bought organic rice, but it wasn’t tasty as grain of rice was mixed up some of them are broken and quite expensive. I prefer rice didn’t use insecticide, I buy 5 kg in bag, as I eat more than often. For one person (even it may enough for two person), you need a coffee cup full of rice. Put it in a vessel with enough water that cover rice. Wash rice many times (Rather crash rise each other, rice won’t broken), water getting milk colour, change water and wash many times. Do this for about 5 minutes. Then you put rice in sieve, dry for 30 minutes. When rice is dry, then put it in cooking pot with lid. Put water (water should be 1,1 times to rice) Leave it for 30 minutes before you cook. Pot covered with lid, rush cooking with hi temperature for around 5 minutes, then stop, don’t open lid, leave it for 10 to 15 minutes... here you have snow shining rice.
