I think many people, conversely, do change their minds- secretly agreeing with those they claim to oppose. But they don't come out. And the reason; Fear... basic peer-pressure stuff.
Even those who boast of going against the grain will surround themselves with like souls. When the vibe of the group gets too intensely tilted towards the ideological, there's less room for dissent.
All this applies left or right. I think on the larger sociological perspective, the centrists on the whole do a pretty good job of being 'open minded'.... after all, they are centrists.
